Green Chili Rice Casserole Recipe
This cheesy Green Chili Rice Casserole is a quick and easy side dish to serve alongside any of your favorite Tex-Mex dishes. It has all of the cheesy, creamy comforting goodness that you look for in a rice casserole, and it’s a perfect way to use up leftover rice.

- 4 cups White Rice cooked
- 8 oz Green Chilis canned
- 2 cups Shredded Cheddar Cheese reserve ½ cup for topping
- 1 cup Sour Cream
- 1 teaspoon Garlic Powder
- 1 teaspoon Salt
- ¼ teaspoon Pepper
- 2 tablespoons Parsley or Cilantro chopped
Preheat oven to 350 degrees F.
In a large bowl, combine the cooked rice, green chilies, 1 ½ cups shredded cheese, sour cream, garlic powder, salt and pepper. Stir until well combined.
Spray a 9 by 13" baking dish with non-stick cooking spray, then spread the rice mixture in the baking dish and sprinkle with the remaining ½ cup of cheese.
Bake for about 20 minutes, or until the mixture is bubbly and the cheese is lightly golden brown.
Remove from the oven and let cool for about 10 minutes, then garnish with chopped parsley or cilantro before serving. Enjoy!
