Green Chili Rice Casserole Recipe
This cheesy Green Chili Rice Casserole is a quick and easy side dish to serve alongside any of your favorite Tex-Mex dishes. It has all of the cheesy, creamy comforting goodness that you look for in a rice casserole, and it’s a perfect way to use up leftover rice.
Ingredients
- 4 cups White Rice cooked
- 8 oz Green Chilis canned
- 2 cups Shredded Cheddar Cheese reserve ½ cup for topping
- 1 cup Sour Cream
- 1 teaspoon Garlic Powder
- 1 teaspoon Salt
- ¼ teaspoon Pepper
- 2 tablespoons Parsley or Cilantro chopped
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, combine the cooked rice, green chilies, 1 ½ cups shredded cheese, sour cream, garlic powder, salt and pepper. Stir until well combined.
- Spray a 9 by 13″ baking dish with non-stick cooking spray, then spread the rice mixture in the baking dish and sprinkle with the remaining ½ cup of cheese.
- Bake for about 20 minutes, or until the mixture is bubbly and the cheese is lightly golden brown.
- Remove from the oven and let cool for about 10 minutes, then garnish with chopped parsley or cilantro before serving. Enjoy!
